Yummy Summer Salad

I got this recipe from one of my best friends, I think she got it from her husbands side of the family. It is a super simple, very flavorful summer salad/side dish that is great for BBQ's!

Frito Corn Salad

2 Cans (drained) Corn
1/2 Cup shredded cheese (I use mexican blend)
1/2 Diced red onion
1/2 Diced red pepper
1/2 Diced orange pepper
1/2 Diced green pepper

I mix above ingredients together and store in an airtight container in the refrigerator until time to serve. Right before serving mix in 1/2-1 Cup of mayo. You just want everything coated, you don't want it super thick. Then add about 1/2 the bag of Chili Cheese Fritos. This salad does not save, the fritos get soggy so eat up!

Provolone Stuffed Turkey Meatballs & Spaghetti

We went to Applebee's for dinner a couple of weeks ago and they had stuffed meatballs on the menu and I thought that sounded good, definitely something I would rather make at home than try at a restaurant (I am not a fan of ground beef) so last week I decided to make up my own recipe and give it a try. I don't measure and I know that is really annoying to some people so I am sorry about that but here is the recipe:

Provolone Stuffed Turkey Meatballs

1 pound ground turkey breast
1/4 Cup bread crumbs
1 egg
Seasonings of your choice (I do onion powder, garlic salt, fresh cracked pepper)
1 tsp chopped garlic

Combine ingredients

bite sized chunks of provolone cheese

Form meatballs around the cheese chunks, place into a lightly sprayed baking dish. Bake at 350 for 20-35 minutes, until meat is lightly golden.

Serve with spaghetti sauce over whole wheat spaghetti noodles and enjoy!

Updates, lots of updates!

I know, I know, I have been so terrible about regularly updating my blog lately. I have had a lot on my plate lately and I will get better about updating the blog.

Lets start with Fathers Day, I decided I would surprise my husband with our first camping trip of the summer over Fathers Day weekend. I found a cute little campground about 20 minutes away from home and it is first come first to get a campsite! So Friday morning he went to work, and I woke up and packed and organized and got everything loaded into the car. I am a little crazy, so I convinced myself that the girls and I needed to leave before 12 to get to the campground in hopes of getting a site before they were all taken. Of course we got there and out of the 40ish campsites only about 8 were taken. So I parked, the girls and I wandered around until we all agreed on the perfect campsite. We unloaded and set up, and by we I mean I since the kids were too busy exploring the campsite and clearing it of all the pinecones! Ha I love those two little girls! Anyway, I got everything set up except for the tent, you need to people to get it upright so I had it all ready to go... I filled out our reservation ticket but couldn't turn it in until I had Ben's plate number which of course I don't know off the top of my head! I called him and told him we decided to have a picnic at the park and asked if he wanted to come meet us. He said of course, I told him to text when he got close. When he sent the text and told me he was close I told him the picnic area was full so we decided to eat at a table in the campground. A few minutes later we spotted him walking through the campground looking for us. He was so shocked that I could pull this off without him finding out and he was also shocked that I only managed to forget a few things. (Packing is not my thing, I always forget at least one thing!) We made lunch then went across the street to the state park and spent the afternoon flipping rocks and searching for little crabs and fish! We went back to the campsite and had a snack then picked up our tennis rackets, tennis balls and some toys for the girls and went back to the park to play. It was a fun low key afternoon, we were all very tired by around 5pm. My oldest daughter who I'm pretty sure would try to stay up for three days straight, started asking if it was time for bed yet! It was a very fun first camping trip, we woke up to pouring down rain the next morning but luckily we packed everything up before we went to bed. All we had to do was put the kids in the car and load up the tent,sleeping bags, air mattresses and we were ready to hit the road. Camping is one of my favorite things to do in the summer, we go again with my inlaws in a couple of weeks, I will have another post about that adventure!

Another thing I wanted to mention was the fact that I co-own a small business with a great friend. We have been doing it officially for almost a year now. Unofficially we have been doing it for probably close to two years. Our biggest event is coming up in September so for the past four weeks I have been so incredibly busy creating and building up product for this event. I am a planner, I like having everything done with time to spare, I am looking forward to having my stash completed and ready to go within the next few weeks so I do not have to stress about being creative throughout the fun summer months! I will do a blog post about our event after it is over!

Babies Babies Babies!

It seems like I know about 27 million people who are pregnant right now! (Not really but there are at least a handful!) I love buying cute baby gifts for my friends, and if they are having girls I love making handmade hair clips or headbands. My friend and I own a small business, Clips by Kara & Nicole, we attend the Blackberry Festival in Bremerton (the first weekend in September) as well as many smaller local craft fairs. We really enjoy it, it's fun, it gives us something crafty and creative to do and we get to spend time meeting new people! Hello Again!

First of all, I wanted to say that I am sad that I haven't updated the blog recently, I would like to blame it on something but I honestly can't do that. I haven't been super busy lately I just haven't tried any fun new recipes, gone on any adventures or really done anything worth sharing. This week we have had some pretty amazing weather, at least as far as Lifer Washingtonians are concerned. Some might say 60-70 degree weather towards the end of May is nothing to get excited about, but for those of us who see rain 85% of our lifetime, any day the sun is shining is a super fabulous day! We should get this great weather all through the weekend so I am sure I will have some fun pictures to share next week!

My Dad's birthday is coming up and my Mom decided to do a theme party, it will be a 60's party. My husband and I found this cute little vintage clothing store in Bremerton, it's called ISH Vintage Clothing, it was recommended to us from an acquantance of mine, Katie. We each picked out a cute outfit and rented them. I am so excited but I still have to decide what the girls are going to wear... if you have any cute ideas share please!!

My friend Kara and I are going to a party on Friday, we will be able to mingle with other small business owners in the Bremerton/Silverdale area. We are really looking forward to a girls night out! I am sure I will have some pictures and stories to share about that adventure too!

Las Vegas

My husband and I were in Las Vegas for five days, it was amazing to go from cold 40 degree weather here in the great northwest, to hot sunny 85 degree weather. It was a fun, relaxing vacation but like most, it went by so quickly. By the time we were packing up our bag it felt like there was no way our four night, five day trip was over already. Once we were on the plane we were both ready to see our girls and get back to our house.

Our daughters had a fun "sleep over vacation" at Nana & Papa's, they were very happy to spend Easter with my family. My brother, his girlfriend, my sister and my Grandparents all came to spend the holiday with my parents and our girls.

Things are pretty busy right now, I'm still trying to get back into a normal routine plus other exciting things like: preparing to register our oldest daughter for kindergarten, getting our youngest completely accident free throughout the night (which is going very well--both my kids are very sound sleepers), and getting caught up on laundry!

I have a few new recipes to post, hopefully I can get to that soon!

Awesome Snack

This is one of our favorite snacks and it's so simple!

Pepperoni Chips

Preheat oven to 450 degrees
Line cookie sheet with foil and put oven safe cookie rack on cookie sheet.
Place turkey pepperoni or regular pepperoni in a single layer on the rack.
Bake for 10-15 minutes, until crisp (watch closely so they don't burn). Remove and let cool. Store in air tight container for up to 4 days. *They never last that long in our house!

Nicole's Chicken Cordon Bleu

This is a recipe I made up on my own, I didn't want to make the rolled up version of this yummy recipe, I like making things as simple as possible!

5 Chicken Tenders trimmed and cut in half
1 Tablespoon olive oil

Cook chicken pieces in olive oil, about two minutes per side, they don't have to be fully cooked. Spray a pan with cooking spray and place chicken pieces in it.

1 can of Cream of chicken soup
2 Tablespoons dijon mustard

Mix together. (If it were just my husband and I, I would have added more dijon, but it can get spicy so I decided 2 T was the right amount so my daughters would eat it.)
Pour sauce over the top of the chicken.

3-6 Slices of deli ham, chopped.

Sprinkle over the top of the chicken and sauce. Bake at 350 for about 20 minutes.

1 Cup of shredded swiss cheese, or 4 slices of swiss cheese.

Top chicken with cheese and place back into the oven and cook for 5-10 more minutes or until chicken is cooked through.

We loved this recipe, I served it with Those Potatoes (at some point I will bring myself to share that recipe--it's a family recipe that is oh so good!) and broccoli.

A trip down memory lane..

On Saturday we participated in our second annual MS Walk Northwest in Kitsap County. Luckily it wasn't raining and we completed our 3 miles in about 45-50 minutes. I was hoping we would be able to beat last years time of 40-45 minutes but I was in worse shape this year, but I am so proud of us. We raised $200 this year, last year we raised $150. I am so thankful to everybody who donated to our team!

After our walk we drove to Olympia, we had plans with family for the evening but we decided to grab lunch and head to the park since the sun was shining. The kids played and had a blast. We then drove out to my old neighborhood. I lived there from the time I was 8 years old until I was 20 when I got married and moved to South Carolina. My parents sold their house about a year after I moved away because they wanted to design and build a new home. We had a dog (she is about 15 years old now) named Yogi, she was a neighborhood dog. In the winter and during cold rainy nights she would sleep in the livingroom but for the most part she was just out roaming around the neighborhood. She had a dog BFF named Shadow who lived in the house across the cul-de-sac from us. When my parents moved they decided to leave Yogi with our neighbors, Shadow's owners because they knew she wouldn't do well in the city or without Shadow. Anyway, when we got to the old neighborhood I saw two signs in my old yard, "For Sale" and "For Rent", I knew this already and if we could, I'm pretty sure I could talk my husband into buying my old house, I love it so much, it's in a great area, great schools, lots of property.... but we already own a house and this market is just terrible for sellers right now. We also saw Yogi laying in the middle of the street. I got out of the car and walked up to her and was talking to her and petting her. It shocked me seeing how old she is but I felt like she remembered me, she was loving the attention. My youngest daughter and my husband got out of the car and she jumped up and hobbled off. She always was a big old chicken! It was good to see her and the old neighborhood, but it was hard seeing her so old and frail. It's not at all how I remember her. The last time I saw her was about 7 years ago though. I know my neighbors are taking amazing care of her and I know she has had a great life.

Signs of Spring

The last couple of days we have had breaks in the rain and we have gone on some fun nature walks after dinner. Since the wetland trails are so close to us that is where we have gone recently. It is so beautiful there, when we are walking the trails I actually forget how much I hate the town that I live in! My favorite time of year to go there is in the summer when all the animals are out. I love seeing the baby ducks and geese. I got a few pictures from our nature walk yesterday evening and I thought I would share.

I made bread and it actually turned out like bread!

Last night I made a big Cobb salad for us for dinner, my kids are amazing like that, they love veggies and salad! I decided I would try to make a loaf of bread since I have never really experimented with making bread. I found a great recipe on one of my favorite blogs "For the Love of Cooking", and I decided to try it. The only difference was I do not have a bread machine, so I just kneaded the dough for a little while, and then sprayed a bowl with cooking spray, put the dough ball in the bowl and covered it with a towel for an hour. After the hour I took it out, kneaded it again on a floured surface and continued on with the directions. Here is the recipe CrustyItalianBread

Crusty Italian Bread

2/3 cup of warm water
3/4 tsp olive oil
3/4 tsp salt
1 1/2 tsp brown sugar
2 cups of flour
1 1/8 tsp yeast
cornmeal
egg

Put water, olive oil, salt, brown sugar, flour and yeast into bowl or bread machine in that order. Mix (on dough setting) or with mixer until well blended.

Deflate the dough and turn it out onto a floured surface. Roll dough into a rectangle then roll up jelly roll style and pinch the seam closed. Place loaf onto a cornmeal sprinkled baking pan. Cover with a cloth and let rise until doubled in size, about 40 minutes.

Preheat oven to 375 degrees.

Beat egg and brush over loaf. Carefully slice a long single cut down the center of the loaf.

Bake for 30-35 minutes or until golden brown and the loaf sounds hollow when tapped on the bottom.


*My loaf was smaller and kind of dense, but to my surprise it smelled like fresh bread and it tasted like fresh bread. I am looking forward to trying more bread recipes in the future, it was very fun and not overwhelming like I thought it would be!

Walk For MS Northwest

This will be our second year walking for MS research. It is a cause that is close to our heart. We had so much fun doing it last year, our daughters rode in the wagon and walked a bit, mostly they enjoyed getting the treats along the way. Orange Chicken

This is a recipe I threw together for orange chicken, it was too orangey so I changed it a little bit. If you make this please let me know what you think, I want feedback!

Orange Chicken

3 Chicken Breasts
1/4 Cup Flour
pinch of Salt
1/4 Cup frozen Orange Juice Concentrate, thawed
3 Tablespoons Brown Sugar
3 Tablespoons Ketchup
1 teaspoon Balsamic vinegar

Olive Oil

Mix flour and salt in a small bowl, set aside. Cut chicken into bite size pieces. Coat frying pan with olive oil and heat to medium. In another bowl mix orange juice, brown sugar, ketchup and balsamic vinegar and set aside. Coat chicken in flour and cook in oil until cooked through. Once chicken is cooked, pour sauce mixture in, bring to boil while frequently stirring and reduce heat to low and let cook for 5 minutes. Stir occasionally.

I served mine over rice and it would have been wonderful if I hadn't of used so much orange juice concentrate. (The amount I used was about 1/2-3/4 Cup, I think 1/4 Cup is a good amount to try.)

Photographers

We haven't had family pictures taken since my youngest daughter (now almost four) was a newborn. I don't want to go back to JC Penney Portrait Studios because that's lame, it's not us. I don't want to go sit in front of a black curtain and all say cheese. I want real photos that capture who we are as individuals and who we are as a family. I want to be outside in the sunshine having fun. I've searched google and facebook trying to find a local photographer, I've had a few recommended to me and I have narrowed it down to one my friend Ashley is going to be using soon. The reason for this post is because I was so shocked to find so many "Photographers" that have education or biographies that say, "I love taking pictures, this is my hobby and I am very talented." I think to myself, well good for them, I know what it's like to have a hobby and find out people are willing to pay for my work. But then I look at their photos which are on the same level as something my five year old daughter has taken, with very little to no editing and they are charging a $150 fee plus the cost of photos. This is crazy to me. I know it shouldn't bother me, because if somebody is willing to pay that kind of money then who am I to care, but I guess I am just offended that anybody can call themselves a photographer. It's like me calling myself a writer just because I have this blog. Haha.... Ok that is the end of my rant. Anyway, if anybody in the Olympia or Bremerton area has any recommendations for a GOOD photographer send me the link, I need to look at their photos before I even consider it! Thank you Ashley for your recommendation, I will most likely be using her!

Sewing

Right now I am super obsessed with sewing. Just like cooking, baking and basically everything else, I do not like following directions. I don't have the attention span to sit down and read directions, cut, pin, read more directions, etc. So I like to just picture things in my head and go from there... it doesn't always work out, but sometimes it works out better than I planned! So my project right now is making a travel hair clip holder.

For those of you who don't know I own a small business with one of my best friends, we make hair accessories (headbands, clips, hats, etc) for girls and women as well as tutu's and fairy wings. This is more of a hobby for us, we love what we do and it's awesome to work at festivals meeting lots of new people and seeing familiar faces who have supported us from day one! Anyway, I am going on vacation next month and I wanted to take some of my hair accessories for myself but don't want to lose them or have them get squished during travel. I am figuring out in my head how I am going to go about this project and attempt to create this travel case. Hopefully by the end of today I will have my first attempt done and I will post a picture.

I love trying new projects but I do wish I had a longer attention span!

The Perfect Pumpkin Bread

I had some pumpkin puree and I was craving some pumpkin bread so I decided to try a new recipe. I altered this one I found from a wonderful blog: http://fortheloveofcooking-recipes.blogspot.com/

1 C pumpkin puree
1/2 C vegetable oil
2 eggs
1 C white sugar
1/3 C brown sugar
1 1/2 C + 1 T of flour
1/2 C oats
1/2 t salt
1/2 t baking soda
1/2 t baking powder
1 t ground cinnamon
1/2 t pumpkin pie seasoning
1 C chopped walnuts
1/2 C chocolate chips

Directions:
Preheat oven to 350 degrees, grease a loaf pan.
Beat together pumpkin puree, oil, eggs and sugars. Add salt, cinnamon and pumpkin pie seasoning along with flour, soda, and powder. When blended add in oats and nuts. Pour batter into pan and sprinkle with chocolate chips. Bake for 50-55 minutes until cooked through. Let cool, serve warm with butter.

I love this recipe, it is my go to bread recipe from now on! If you make this please leave a review or any changes you made, enjoy!

Greek Chicken Pasta

I wanted to make something new, so I threw this together one night for dinner and was very impressed.

Greek Chicken Pasta

14.5 oz (or one box/package) of Bow Tie or your favorite pasta, cooked according to directions
1 Tomato diced
1/2 Can of sliced olives
1/2 t dried oregano
1/2 Cucumber, peeled and diced
1-2 Large Chicken breasts, cut into bite sized chunks, cooked in olive oil and oregano
1/2 Cup crumbled feta

Olive Oil
Salt & Pepper

Cook pasta according to directions, drain and put into serving bowl. Cut up chicken breasts in olive oil, and a little sprinkle of oregano. Cool and put in bowl with pasta. Peel and chop cucumber, dice tomato and slice olives, combine into bowl with pasta and chicken. Add feta, mix well. Season with olive oil and salt & pepper to taste.

My Kids

So I have two daughters, I love them more than anything. They are the most important things in my life but sometimes they drive me crazy! Today and yesterday were a couple of those crazy days. It just so happens that my Mom called and asked if they could come have a sleep over at her house. When I told my daughters they ran around the house screaming about how excited they were to go! I was just as excited, I thought it would be nice to have the whole house to myself, enjoying the silence... taking a nap, watching a movie, reading a book, or doing some cleaning, but in complete silence! This happens to me every time they go to my Mom's for the day/night..... I get so sad after about 30 minutes of being alone. I miss hearing my girls chase each other and laugh, I miss seeing my little one walk around in dress up clothes all day with sunglasses on. I miss my big girl drawing pictures and taping them all over the walls. I guess I should just enjoy the silence while I have it because I know tomorrow my little noise makers will be back and ready to play.

Food Blogs

I am obsessed with making weekly meal plans before I go grocery shopping. I go shopping every two weeks so making meal plans for 14 days worth of dinners is pretty difficult sometimes. I hate feeling like we are always eating the same things. I love looking for food blogs to give me ideas for new meals, I am not big on following recipes but I love trying new things. My problem is that I am too picky about blogs. If there aren't pictures and the blog doesn't flow well I cannot waste my time looking at it. I have a few food blogs I follow regularly but they aren't updated on a daily basis, more like weekly which doesn't really help me that much. I know some people don't really like this "holiday" and to be honest, I am one of those people who could kind of care less about it. It's nice to have a day where your husband is forced to buy you a present for no reason other than because he loves you, but it somehow manages to sneak up on most of us with our busy lives.

Where has the time gone?

I have always had a bad memory, after having each child I was shocked that I had any memory left to lose. It is hard for me to recall events that happened 5-10 years ago, so when my daughters were babies I would spend hours writing in their baby books so I could remember specifics from when they were little. I think part of being a mom is being able to remember everything about your children. As my oldest daughter is about to turn five I look back and remember my whole pregnancy, all of my doctors appointments, the multiple times I thought I was in labor but just ended up being kicked out of labor and delivery! I remember the time my daughters were born, I remember their weight and length, I remember how old they were when they got their first teeth! It's crazy to me the things I thought I would lose but have stayed so fresh in my mind.

As she approaches her fifth birthday all I can think of is, "My baby is too little, she can't start Kindergarten this fall!" I have to keep reminding myself it is only February, and September is seven months away! She is so smart and I know she will do well in school, but with each new stage in life, it's one day closer to her not being my baby anymore. I keep joking with my husband that I will be standing outside her classroom window crying and watching her go about her day, I am fairly confident I won't be standing there the whole length of class, but I am pretty sure I will be there for a little while, at least on the first couple of days! That also reminds me that my younger daughter will be starting Pre-K in September, again, I'm not real sure how we have gotten to this point so fast. Sometimes it hits me, I'm not 17 years old anymore, I'm a 26 year old married mother of two. I love my life, I love my family and I love my job (being a stay at home mom) but sometimes I wish I could just slow time down just a bit it seems to be passing so quickly!

Cupcakes = Love

Cupcakes are the hot new thing right now. I love them because they are small and for some reason I feel better about myself after I eat a cupcake, but if I eat a piece of cake I feel like I just gained 10 pounds from fat and sugar.

I am not satisfied with your basic white or chocolate cupcake, I need something exciting and different! I have tried cupcakes from a few different local stores and surprisingly I found the QFC bakery sells some of the best I have tried in the area.

My oldest daughter is about to turn five, I'm trying not to get started on that, that is a whole different blog post that will be coming soon. This weekend we had her birthday party at Chuck E Cheese, her and her friends had so much fun, it's always an adventure there! Anyway, I found a baker via Facebook who makes cupcakes, after browsing her pictures and trying not to drool all over my laptop I decided I was ordering cupcakes from her for my daughters birthday party. After about thirty minutes I was able to decide on two flavors for the party. I picked hot fudge sundae because I knew the birthday girl would flip for them, and I picked chocolate raspberry thinking the adults might like a chocolate option. It was so hard to not test a few the night before the party, they looked so wonderful! Overall the cupcakes were great, I was impressed with the price, the way they looked and the way they tasted. Hot fudge sundae was the winner by far with a cute scoop of frosting, topped with some hot fudge, sprinkles and topped with a cherry! The chocolate raspberry was very good, I am not usually a fan of chocolate cake, it's too rich and just not my thing, but the raspberry butter cream frosting was absolutely delish! Overall everybody was very happy with the cupcakes.

I will be ordering cupcakes from Sweet Charley B's Cupcakery in June for my younger daughters 4th birthday party, I cannot wait to try a few new flavors! If you are in the Olympia area you should look for them on Facebook!
